Chewy Chocolate Chip Cookies

Makes 30 | Under 30 minutes

Ingredients

360g plain flour

1 tsp bicarb soda

1/2 tsp baking powder

1 tsp sea salt

225g unsalted butter, softened

200g agave sweetener

210g brown sugar

1 tsp vanilla extract

2 eggs

300g chocolate chips (or chopped chocolate)

Method

Step 1: Preheat oven to 190°C and line two baking trays with parchment paper. In a large bowl, combine the flour, bicarb soda, baking powder and salt.

Step 2: Place softened butter, agave sweetener and brown sugar in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed for 2-3 minutes, or until lighter in colour.

Step 3: Add the eggs, one at a time, scraping down the sides with a silicone spatula as needed. Next, add the vanilla and mix again.

Step 4: Gradually add the dry ingredients and continue mixing on low speed until just combined, then add the chocolate and mix well until just combined.

Step 5: Take 1-2 tablespoons of the dough and roll into balls, then place on your prepared baking trays. Be sure to leave ~ 6-8cm between each cookie. Transfer to oven and bake for 8 minutes, or until they are just tarting to turn golden brown. Once cooked, stand for 4 minutes, then transfer to a wire rack to cool.
