Pasta with Sausage, Radicchio and Sage

Serves 2 | Under 20 minutes

Ingredients

200g pasta of choice (I used shells)

30ml extra virgin olive oil  

300g Italian pork sausages, removed from casing 

1/2 radicchio, roughly chopped 

8-10 sage leaves 

40g pecorino, grated 

Salt and pepper to taste

Method 

Step 1: Bring a pot of salted water to boil and cook pasta until al dente. Heat olive oil in a deep frypan over medium heat. Once hot, add the sausage filling and break up with the back of the spoon. Add the sage leaves and cook for 4-5 minutes, or until golden and fragrant. Season with salt and pepper. Next, add the radicchio and cook for another 1-2 minutes. 
Step 2: Once the pasta is cooked, use a slotted spoon to transfer to the frypan, along with ¼ - ½ cup of pasta cooking water and the pecorino. Cook for another 2-3 minutes over medium heat, or until the cheese has melted, then divide amongst bowls and garnish with cracked black pepper and more pecorino.
