Simple Seeded Crackers

Makes 2 large baking trays | 45 minutes | Nut Free | Vegan

Ingredients

  • 80 grams sunflower seeds 

  • 45 grams flaxseeds 

  • 40g sesame seeds 

  • 35g pumpkin seeds (optional)

  • 2 tablespoons chia seeds 

  • 1 teaspoon salt flakes, plus extra for on top

  • 155g spelt or wholemeal flour

  • 125ml water

  • 80ml olive oil

Method

Step 1: Preheat the oven to 180°C. Place the sunflower seeds, flaxseeds, sesame seeds, pumpkin seeds, chia seeds, flour and salt in a bowl and stir to combine. Add the olive oil and water, then mix well to form a wet dough. 

Step 2: Divide the dough in half and roll each piece between two large sheets of baking paper - the thinner the better. Transfer to two baking trays and sprinkle with extra salt. 

Step 3: Bake for 20-25 minutes, or until golden and crisp. When the crackers are baked, let cool before breaking into large pieces.
