Peanut Butter Hedgehog Slice

A classic no-bake hedgehog slice, but with a nutty twist! With only six ingredients, and a delightful addition of peanut butter, there’s no doubt you’ll be going back for seconds!

Ingredients

Base

  • 200g dark chocolate

  • 120g Fix & Fogg Everything Peanut Butter

  • 250g condensed milk

  • 1 tbsp coconut oil

  • 180g arrowroot biscuits

  • 55g walnuts, roughly chopped

  • Pinch of sea salt

Topping

  • 200g dark chocolate

  • 2 tsp coconut oil

  • Pinch of sea salt

Method

Step 1: Line and grease a square baking tin, set aside. For the base, place the chocolate, peanut butter and condensed milk in a saucepan over low heat. Stir gently until melted.

Step 2: Meanwhile, place the biscuits in a bowl and crush with the end of a rolling pin until there is a combination of big and small pieces, then add the walnuts and sea salt and pour over the melted chocolate; mix well. Transfer mixture to the lined tin, spread evenly and press firmly to compact, then refrigerate for 30 minutes.

Step 3: While the base is setting, place the remaining chocolate and coconut oil in a saucepan over low heat. Stir gently until melted, then pour over the refrigerated slice. Return to the refrigerator for at least 30 minutes. Once set, slice and serve.


Notes:

  • To make this recipe gluten free, use gluten free arrowroot biscuits like these.

  • To make this recipe dairy free and suitable for a vegan diet, use condensed coconut milk, like this.
