Lemon and Passionfruit Loaf 

Serves: 8-10 | Total time: 1 hour

Loaf Ingredients 

  • 200g caster sugar 

  • 110g olive oil 

  • 2 teaspoons vanilla extract 

  • 3 tablespoons lemon juice 

  • 1 teaspoon lemon zest 

  • ¾ cup passionfruit pulp 

  • 3 eggs 

  • 240g plain flour

  • 1 tablespoon baking powder 

  • ~½ teaspoon) 

  • 115g yoghurt 

Frosting

  • 200g mascarpone 

  • 1 tablespoon lemon juice 

  • ¼ cup passionfruit pulp 

Method 

Step 1: Preheat the oven to 170°C and line a loaf tin with baking paper. In a large bowl, whisk sugar, olive oil, vanilla extract, lemon juice, lemon zest and ¾ cup passionfruit pulp. Add eggs and whisk again until smooth. 

Step 2: Fold in flour, baking powder and salt. Gently stir in the yoghurt, mix until just combined. Pour batter into your prepared loaf tin and bake for 40-45 minutes, or until a skewer comes out clean. If the top starts to darken, simply cover with a sheet of aluminium foil. 

Step 3: Once cool, whisk together the mascarpone with the remaining lemon juice and passionfruit pulp. Spread on top of the loaf, then serve.
