Caramelised Beef Burger

Ingredients
Caramlised onions
- 1 tablespoon olive oil 
- 1 red onion, finely sliced 
- 1 teaspoon brown sugar 
- ¼ teaspoon salt 
Beef Patties
- 500g beef mince 
- ⅓ cup breadcrumbs 
- 1 tablespoon parsley, finely chopped 
- ¾ teaspoon salt 
- ½ teaspoon black pepper 
- 1 tablespoon olive oil 
- 4 slices cheese 
Hamburgers
- 4 hamburger buns 
- 2 tablespoons tomato chutney or ketchup 
- 4 leaves lettuce 
- 1 tomato, sliced 
- 75g sliced tinned beetroot 
Method
Step 1: Preheat the oven to 170°C. Heat 1 tablespoon of olive oil in an ovenproof pan over medium heat. Add the onions, salt and brown sugar. Cook, stirring occasionally for 10-15 minutes, or until soft and caramelised, then remove from the pan and set aside.
Step 2: In a large bowl, combine the beef mince, breadcrumbs, parsley, salt and pepper. Divide the mixture into 4 portions and shape into patties.
Step 3: Heat the remaining 1 tablespoon of olive oil in the same frypan. Add the patties and cook for 5 minutes on each side, or until golden. Place a slice of cheese over each patty and transfer to the oven for 2-3 minutes, or until the cheese has melted.
Step 4: To assemble, spread tomato chutney (or ketchup) over the burger base, followed by the lettuce, beef patty, caramelised onions, tomato and beetroot.
