Honey and Apple Cider Vinegar Glazed Salmon

Serves 2 | Under 30 minutes

Ingredients
2 x salmon fillets
2 tbsp Renovatio Activated Apple Cider Vinegar
1 tbsp honey
1 tbsp extra virgin olive oil
3 tsp wholegrain mustard
1 garlic clove, minced
1 x bunch broccolini
1 x bunch asparagus
150g snow peas
1 red chilli, finely sliced
4 spring onions, finely sliced


Method
Step 1: Preheat oven to 180°C and line a baking tray. In a small bowl, combine apple cider vinegar, honey, olive oil, mustard and minced garlic.

Step 2: Place the broccolini, asparagus and snow peas in a large baking dish and pour over half the sauce. Toss gently to combine.

Step 3: Nestle the salmon amongst the vegetables and pour over the remaining sauce. Season with salt and pepper, then cook for 15-20 minutes, or until the salmon reaches your preferred doneness.

Step 4: Once cooked, divide salmon and vegetables between two plates and garnish with red chilli and spring onions.
