Easy Baked Stone Fruit

This is my go-to dessert if I haven’t got any baked goods on hand. Serve with your choice of custard or ice-cream and you’ll be hooked!

Total time under 1 hour | Serves 2-4 | Vegan | Gluten Free | Nut Free

Ingredients

  • 4 pieces of stone fruit (i.e. plum, nectarine, peach)

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon water

  • 1 teaspoon vanilla extract

  • 1 cinnamon quell

  • 2 cloves

  • 1 star anise

Method

Step 1: Preheat oven to 185°C. De-stone fruit and slice into wedges. Place in a baking tray and add remaining ingredients. Mix together, then cover with aluminium foil and bake for 35-45 minutes, or until softened.

Step 2: Serve with custard or ice cream…enjoy!
