Choc Chip Oat Cookies

Total Time 30 mins | Makes 12-15 cookies | Vegan, Gluten Free Option

Ingredients

  • 200g rolled oats

  • 2 tablespoons plain flour (gluten free if needed)

  • 70g almond meal

  • 1 teaspoon baking powder

  • Pinch of sea salt

  • 1 teaspoon cacao powder

  • 6 tablespoon maple syrup

  • 4 tablespoons olive oil

  • 1 tablespoon milk of choice

  • 40g dark chocolate chips, roughly chopped

Method

  1. Preheat oven to 180°C, fan forced.

  2. Combine the rolled oats, oat flour, rice flour, cacao powder, almond meal, baking powder and salt in a large bowl and mix well.

  3. Add the olive oil, maple syrup and almond milk to the bowl and mix well to combine. Add the chocolate chips and mix through. Refrigerate the dough for 10-20minutes.

  4. Scoop out balls of the mixture using a large spoon, and roll them into compact ball using your hands. Place the balls on a lined baking tray and flatten gently with the palm of your hand. Bake for 12-15 minutes, or until golden. Remove from the oven and let cool slightly before eating.
