Gluten Free Waffles

Total time 15 minutes | Serves 2 (makes 4 waffles) | Vegan | Gluten Free | Nut Free Option

Ingredients

  • 30g flax meal

  • 300ml milk of choice

  • 65g almond meal (sub for more plain flour to make nut-free)

  • 40g plain flour (gluten free, if required)

  • 150g oat flour (gluten free, if required)

  • 1 tbsp baking powder

  • 1/2 tsp ground cinnamon

  • 1 pinch salt

  • 60ml maple syrup

  • 60ml olive oil

  • 1 tbsp vanilla extract

  • 1 tsp apple cider vinegar

  • 120g ripe banana, mashed (approximately 1 medium banana)

Method

Step 1: In a medium bowl, whisk together flax meal and milk. Set aside for 5-10 minutes to thicken. In a large bowl, combine almond meal, plain flour, oat flour, baking powder, cinnamon and salt.

Step 2: Once the flax meal mixture has thickened, add maple syrup, olive oil, vanilla, apple cider vinegar and mashed banana. Whisk thoroughly to combine, then gently fold into dry ingredients.

Step 3: Generously brush your waffle iron with olive oil, then spoon in between 1/4 - 1/2 cup batter and cook according to manufacturer’s directions. Repeat with remaining batter (storing the waffles on a wire rack). Serve with your choice of toppings, I opted for banana, peach, chocolate spread, maple syrup and chia seeds!
