Mango and Brown Rice Salad
Serves 4
Ingredients
1 cup brown rice
2 handfuls baby spinach
1 mango, sliced
3 radishes, thinly sliced
1 bunch coriander, roughly chopped
1 bunch mint, finely chopped
4 spring onions, finely sliced
50g feta, crumbled
Juice of 1 lime
Olive oil, to drizzle
Salt, to taste
Method
- Cook the brown rice according to the packet instructions. Once cooked, rinse under cold water to cool down and drain. 
- In a large bowl, combine the cooked rice with the baby spinach, mango, radishes, coriander, mint, spring onions and crumbled feta. 
- Drizzle with lime juice and olive oil. Season with salt and toss to combine, then serve.
