Harissa Roast Chicken

Serves: 4-6

Ingredients

1 tbsp extra virgin olive oil 

1 tbsp harissa paste 

1 tbsp lemon juice 

2 garlic cloves, minced 

1 x free-range chicken, at room temperature 

Method 

Step 1: Preheat oven to 200°C. Place the garlic, harissa, olive oil, lemon juice, salt and pepper in a small bowl and mix to combine. 

Step 2: Place the chicken in a baking dish and rub all over with the marinade. Roast for 30–35 minutes or until the chicken is cooked through and the skin is golden.

Step 3: Serve with the lemon roasted potatoes and cabbage slaw
