Fluffy Breakfast Waffles

Serves 2 | Nut Free | Under 30 mins

Ingredients

170 flour

2 tsp baking powder

1 tsp cinnamon

200ml milk

2 eggs

2 tbsp maple syrup

1tsp vanilla extract

Method

Step 1: Sift flour into a large bowl and combine with baking powder and cinnamon. Add milk, egg, maple syrup and vanilla extract; whisk to combine, ensuring no lumps are present.

Step 2: Generously spray your waffle iron with olive oil, then pour in between 1/4 - 1/2 cup batter and cook according to manufacturer’s directions. Repeat with remaining batter (storing the waffles on a wire rack). Serve with your choice of toppings, I opted for banana, yoghurt, walnuts and honey
