Chai Spiced Granola

Serves 2 | Vegan

Ingredients

  • 2 cups rolled oats

  • 1 cup coconut flakes

  • 1/3 cup walnuts, roughly chopped

  • 1/3 cup pecans, roughly chopped

  • 1/4 cup pumpkin seeds

  • 1/3 cup dried cranberries

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ginger

  • 1/4 tsp clove

  • 1/4 tsp sea salt

  • 1 orange, zested

  • 75ml maple syrup

  • 60ml coconut oil

  • 1/2 tsp vanilla extract

Method

Step 1: In a large bowl, combine the oats, coconut flakes, walnuts, pecans, pumpkin seeds, cranberries, cinnamon, ginger, clove, sea salt and orange zest; stir well and set aside.

Step 2: In a seperate bowl, combine the melted coconut oil, maple syrup and vanilla; stir well. Pour the syrup mixture over the granola and mix well to combine.

Step 3: Line an oven tray or Line an air-fryer basked with baking paper, add the granola and spread out evenly. Cook at 160° for 12-15 minutes, stirring at the half-way point. Once cooked, remove from the air-fryer and let cool completely. Store in airtight containers for up to 4 weeks.
