Brown Rice and Salmon Power Salad
Serves 1
Ingredients
1 cup cooked brown rice (I used the microwave pouches so I don’t need to do any dishes!)
2 spring onions (green parts), finely sliced
2 tbsp pistachios, roughly chopped
Small handful of fresh mint, finely chopped
Small handful of fresh coriander, finely chopped
Sprinkle of crumbled feta
1 smoked salmon fillet, flaked (I liked the hot smoked salmon fillets)
1 Lebanese cucumber, diced
Small handful of raisins or sultanas
Pinch of chilli flakes
Pinch of sumac
Salt & pepper, to taste
Drizzle of olive oil
Method
- In a large bowl, toss together the cooked rice, spring onions, pistachios, mint, coriander, feta, salmon, cucumber and raisins (or sultanas) until well combined. 
- Sprinkle with chilli flakes, sumac, and season with salt and pepper. Finish with a drizzle of olive oil, toss again, and serve.
